Happy New Year!
Let's start 2010 with a healthy and delicious recipe! This was one of many of the tasty items I had over the holiday break. Kind of summery, but then again it was 77 degrees in San Diego the day we had it :) It was made by my mother-in-law and found via Le Journal de Femmes:
One cucumber
One can coconut milk
One or two limes (she used lemons)
3 leaves of Coriander (she used Coriander powder)
Salt to taste
Peel (optional) the cucumber and cut into pieces
Mix in blender with the other ingredients
Serve in chilled glasses
Serves four

It is very agreable. Could also be decorated with a small mint leaf .
